Lambless Vegan Kofta

Now that Spring is just around the corner, it's time to mix up some sunshine recipes! Here we have my speedily simple, store-cupboard take on Jordanian kofta using ground herbs & spices for deep flavours & hearty aromas. But if you're cooking Indian, Greek, Romanian, Turkish or any other cuisine, just keep the 3 base ingredients (mince, onion & garlic) then switch & swap the dried flavours!

Meatless Farm mince is absolutely perfect for these little dudes! Every time I start mixing it into a recipe, Meatless Farm never fails to amaze me just how well their mince remains tender without reducing to mush like a few other plant meats. The texture is super fleshy without feeling too much like the real deal but adds that chewy, bulky bite you can't find in just veggies alone. That's why I love using this mince to give my mouth a little more excitement. & tonnes of protein too! I've converted vegan-meat-sceptics with this recipe because of how soulwarming my little koftas are ... fabulous for #MeatfreeMonday, gluten free friends, a cheap & tasty meal, BBQs & of course, our Earth.

But koftas aren't just for being tucked into soft flatbread with lots of salad & creamy sauce ... these meatless balls can go with everything & anything! Fry them into your Friday night Jalfrezi & serve with all the sides, brown them on a pan then simmer in your Saturday spag bol, marinate with marinara for a Sunday sub then grill & toss with Greek salad & tzatziki in Monday's packed lunch. Make them your own ~ add whatever you love & cook them whichever way works! Kofta are delish bulked up with bulgur, rice, veggies or couscous & fried, baked, steamed, grilled or poached.

 

Lambless Kofta


Serves: 4-5 (or 12-14 koftas)

Prep time: 5 mins

Cook time: 20 mins

Total time: around 25 mins



Ingredients:

  • 1 pack Meatless Farm Mince

  • 1 large red onion (I like red for some sweetness!)

  • 3 garlic cloves

  • 1 tbsp za'atar

  • 1 tbsp onion powder

  • 1 tsp paprika

  • 1 tsp ground black pepper

  • 1 tsp sumac

  • 1/2tsp salt

  • 1/2tsp ground chillis

  • 1/2tsp garlic powder


Method:

  1. Preheat the oven to 200'c then very finely chop the onion & mince the garlic. Add to a large bowl.

  2. Chuck the all Meatless Farm mince into the bowl & sprinkle over the herbs & spices.

  3. Now, mush everything together until the mince is evenly flavoured & veggies are equally spread. I like to do this bit with my hands!

  4. Mould into koftas & poke onto skewers (I tend to double them up on the stick) & place onto a baking tray.

  5. Bake for 20 mins, carefully flipping halfway, until golden brown.
