FATT ~ Facon Avocado Tofu & Tomato Club Sandwich
Look at this chunky club sammie just spilling with plantbased protein & natural nutrition! Such a simple way to stuff all the wonderful food groups into one brunch bite & uplift your day with energy, deliciousness & love. The texture of crispy facon, smooth baked tofu, juicy toms & creamy avo all in-between seedy wholemeal sparks like a firework in your mouth ~ food isn't just about energy or taste, it's about curiosity, variety & the mixing of flavours, textures, colours & aromas to excite your mind, body & soul!

Ingredients:
2 slices seeded wholemeal ~ I used Robert's Seriously Seeded Bloomer
3 rashers THIS Is'nt Bacon
1/4 block smoked tofu ~ I love Tofoo's!
1/2 avo sliced
4 Pomodorino tomatoes
a few squirts Sunflower Frylight or dash of oil
dollop of Hellmann's vegan mayo (optional)
Method:
Firstly, preheat the oven to 200'C & line a baking tray with tin foil. Slice the tofu in half & place on the tray. Bake for 15-20 mins until staring to turn golden, flipping half way. The tofu may stick to the toil so very gently lift with your fingers when turning!
While the tofu bakes, slice the avo & tomatoes.
When the tofu has around 5 mins left, heat the Frylight (or oil) in a med-high heat pan. Once hot, add the facon rashers ensuring the fan is hot enough that they sizzle once in.
Fry for 5 mins (flipping & turning often) until crisp but not dry.
Now time to assemble! Cut the tofu halves in half again & spread equally across one slice of bread (or toast!). Next, layer the facon then the avo & sprinkle the tomato halves into any gaps.
Squirt with vegan mayo (optional), top with the other slice of bread & press down before slicing your sammie in half! The perfect plant powered brunch.
