Light Mango Chutney Salsa
Here is my summery salsa recipe! When folding up some homemade sambusas, I thought a cool & chunky mango chutney would perfectly pair the spicy pulses in the little Ethiopian triangles. But I didn't really have time to make a jar of chutney plus I'm not a big fan of all the sugary & oily add-ins. So this bowl is my 10 minute ~ raw ~ colourful ~ surrogate salsa that I scooped up with a sambusa in hand!
Mango Chutney Salsa
Serves: 1 big bowl
Prep time: 5-10 mins

Total time: 5-10 mins
Ingredients:
1 ripe mango
1/2 red bell pepper
1/2 red onion
5cm cucumber
1/2 bird's eye chilli (optional)
large handful coriander
1 lime, juice
Method:
Chop the mango & all the veggies into small chunks.
Toss together in a bowl then squeeze over the juice of 1 lime.
Simply make sure all the chunks are combined & chill in the fridge!
