Ethiopian Berbere Spice Blend
Mmmmm... authentic Ethiopian flavours are some of my favourite at the moment! I've been scooping up quite a lot of spicy pulses with injera at market stalls dotted around London so thought I'd test out making my own plantbased, north African recipes (like these little triangle friends!). Here is my version of berbere ~ the homemade chilli mix that is the soil for Ethiopian stews & legumes & curries. As I like to cook simply sourced nosh, I've used spices that every body can easily gather from their cupboard or local supermarket so it may not be the MOST authentic... but it hopefully does the job!

Ingredients:
1tbsp ground coriander
1tbsp paprika
1tbsp fenugreek
1tbsp all spice
1tsp ground cloves
1tsp nutmeg
1tsp ground ginger
1/2tsp ground garlic
1/2tsp ground hot chilli
1/2tsp ground cinnamon
pinch cardamon pods
Method:
Simply mix all the ground spices in a pestle & mortar!
