Vegan Spicy Mixed Veg Stir-Fry
Nom nom nom, what better way to use up the week's leftover veggies than shoving them all in a wok? This stir-fry is full of wellness & nourishment without using tonnes of oil!
Feel free to add whichever veggies you want but I always find using carrots, mangetout, peppers & broccoli as a base really adds a crunch to the noodles. I also like to throw in mushrooms, chilli, spring onions & garlic to pack in the day's share of veg !
Although this recipe still uses a bit of oil, it's perfect to whip up when you're craving a takeaway or a treat but still want to be healthy! & why not go all out & add a little bowl of steamed edamame with chilli as a side?
Spicy Veggie Stir-Fry
Serves: 1 hungry person
Prep time: 5 - 8 mins
Cook time: 10 - 12 mins
Total time: 15 - 20 mins
Ingredients:
1 portion fine egg noodles (or soba noodles for vegans!)
handful mushrooms
handful Chantenay/mini carrots
handful broccoli florets
1/4 red pepper or 2 mini sweet peppers
small bunch spring onion
1 clove garlic
1 chilli
handful mangetout
pinch pepper
sprinkle sesame seeds
splashes of dark soy sauce
2 tbsp sesame oil
Method:
Add the noodles to a pan of boiling water & cook for up to 3 mins - until separated but not too soft. In a colander, thoroughly rinse in cold water & drain.
Peel & slice the mushrooms & carrots into strips. Chop the chilli, spring onion, garlic, broccoli & pepper into strips too but leave the mangetout as they are.
On a high heat, add 1 tbsp sesame oil to a wok & throw in all the veg - apart from the mushroom & garlic. Fry for around 5 mins, moving the pan frequently, until starting to crisp. If burning/sticking to the pan then add a tad more oil.
Now, add the mushroom to the veggies & a splash of soy. Fry for a further 3 mins.
When done, transfer all the veg onto plate & add the other tbsp of oil to the wok.
On a high heat, stir-fry the noodles for 3 mins (adding more splashes of soy) before throwing the veg back in & cooking for a further 3 mins until crispy.
Serve sprinkled with sesame seeds & why not add some steamed edamame with chilli as a side?
