Vegan, Healthy Banana Oatmeal Cookies


This morning I woke up with a sweet tooth & decided to get my apron on! I wanted to bake something a bit sweeter than usual but it still be healthy, quick & simple. So, I thought I'd treat myself with some hearty cookies using only 4 ingredients ...

I love using bananas in baking. They're a fab way to add natural sweetness to your bake & are also a brilliant egg substitute! Most recipes use eggs to give the cookies a gooey texture due to the dryness of the flour. But these cookies are flour-less with the banana & vanilla soya milk making every bite chewy yet healthy. & fat free!

Instead of adding cups of sugar, this recipe uses soya milk, banana & cinnamon to give the cookies their natural sweetness. Not only are they guilt-free, but the soya mixed with oats also makes the bake sooooo chewy & heartwarming! & don't forget, the plantbased milk means that there's no need to pour in any extra vanilla!

As I talked about before in my Vegan Banana & Blueberry Bread, I always mash the bananas in a measuring jug. The handle makes it so much easier to whisk/mash & the more the mashed, the lighter the bake!

It's August & Autumn is nearly here! To celebrate & welcome my favourite season, I've added a couple of cinnamon sprinkles to the recipe & it really gives the cookies a heartwarming, Autumnal feel.

This recipe is super quick & simple to throw together but it's just really a guide. Because there are only 4 ingredients to form the base, these cookies with go will virtually anything - sweet or savoury! Add any leftovers you've got or whatever takes your fancy when staring blindly in the cupboard. Why not try...

  • Moo Free choc chips

  • raisins

  • dried cranberries

  • nutmeg

  • ginger

  • little apple chunks

  • walnuts

  • apple sauce instead of brown sugar

  • lemon

  • poppy seeds

  • peanut butter

  • raspberries

  • sesame seeds

  • quinoa

The ingredients mix together to make around 9 large, flat cookies but you could easily make more by moulding the mixture into chunky balls! & why not sprinkle with nuts, brown sugar or extra cinnamon?

 

Vegan Banana Oatmeal Cookies


Serves: 9 wholesome cookies

Prep time: 5 mins

Cook time: 20 mins

Total time: 25 mins


Ingredients:

  • 3 overripe bananas

  • 1/2 cup vanilla soya milk

  • 2 cups oats

  • 1 tbsp light brown sugar

  • 2 tsp cinnamon


Method:

  1. Preheat oven to 180'C.

  2. Mash the bananas then mix in the milk & brown sugar. Gradually stir in the oats.

  3. Now, add any extras or flavours (check out some ideas above!) - this time I've used cinnamon.

  4. Spray a cookie tray with virgin coconut oil & spoon out 9 dumplings of the cookie mixture. Flatten & sprinkle with a little cinnamon.

  5. Bake for 20 mins until golden.​
