Vegan Banana & Oats Granola Flapjack Chunks
When I make a coffee (which is about 15 times a day...) I often want a little bite of something sweet to keep me going. These flapjack chunks are the perfect solution! Even though they look quite dinky, they pack in loads of goodness (but no fat) & leave you feeling energised while still being slightly sweet.
This flapjack twist will leave you feeling guilt-free as there is no unnatural nonsense. The mashed bananas means no need for eggs & the oats make the perfect substitute for flour. And because I've added every nut, seed & dried fruit in my cupboard, one chunk (or two...) fills your soul right up with fibre, super healthy fats, natural sugar & protein!
These chunks also make a great add on to any breakfast. I like to make a batch the night before or early in the morning because they're such a quick bake! Mashing a couple of bananas & mixing in some goodness is all there is to them - so minimal effort needed. If you plonk them in a tin they tend to last up to around 4 days. If they don't all disappear before then...
For me, this recipe is just sweet enough because the banana, dried fruit & cinnamon all mingle together to give you that warm, comforting feeling. I also love the texture! Usually flapjacks are cooked a bit longer but because there are no eggs, I've reduced the time a bit to allow the banana to still be chewy with the nuts giving that extra crunch.
But if you're not overly mad on fruit & nut or want something a bit sweeter, why not add a splash of vanilla or throw in a handful of Moo Free choc chips instead of raisins? Or if you want to keep it healthy but are still craving some more sugar then you can easily add in loads of different dried fruit!
Vegan Granola Flapjack Chunks
Serves: 25 chunks (or 10 beefy bars)

Total time: 25 mins
Ingredients:
2 large overripe bananas
1 cup oats
1 tsp cinnamon
1/2 cup raisins
1/4 cup dried cranberries
1/2 cup mixed nuts (a premixed bag or whatever seeds you have in; I used walnuts, cashews, peanuts, hazelnuts & almonds)
1/4 cup mixed seeds (a premixed bag or whatever seeds you have in; I used sunflower, pumpkin, hemp & linseed)
sprinkle sesame seeds
sprinkle poppy seeds
Method:
Preheat oven to 180'C & line a 10 x 8 tin (a deepish tin for brownies) with greaseproof paper.
Mash the bananas in a large bowl then stir in the cinnamon (if you're using vanilla, add a splash now). Gradually combine the oats.
Now mix in all the fruit, nuts & seeds making sure there are no uneven clumps. Sprinkle in the poppy & sesame seeds then give the mixture a final stir.
Spoon into the prepared tin. Ensure the mixture is evenly distributed & flatten.
Bake for 20 mins until slightly golden brown.
Transfer onto a wire rack to cool completely. Peel away the greaseproof paper & cut into chunks or bars. I like to cut the rectangle into strips with a knife then - with my fingers - rip the strips into chunks to give them a more rough look.
